Macadamia Cookies

1 C. butter1 t. baking soda
2 C. white sugar1/2 t. salt
2 eggs1 2/3 C. vanilla chips
1 t. vanilla extract4 ounces macadamia nuts, chopped
1 1/2 C. flour  

Instructions

Preheat oven to 350 degrees.

In a large mixer bowl, beat butter and sugar until creamy.

Mix in eggs and vanilla extract. Beat until light and fluffy.

In a separate bowl, stir together the flour, baking soda and salt, gradually blend in the butter mixture.

Stir in the vanilla chips and macadamia nuts.

Drop by rounded tablespoonfulls onto an ungreased cookie sheet.

Bake for 9 minutes. (Do not overbake; cookies will be soft. They puff while baking and flatten upon cooling.)

Cool slightly and remove from pan.
